Vegetable Rolls

Mix flour, baking powder, salt. Rub the butter into the flour, until everything is combined.

Add water and mix till a stiff of dough is formed. Knead the dough for about 2-3 minutes. Leave it to rest for 5-7 minutes.

Place a pot over a medium heat add the oil, onions and stir fry until onion is pale, add in green pepper, scotch bonnet and red pepper. Fry again for a few minutes then add the peas and sweet corn, seasonings and spices.

Lower the heat and leave it to simmer for another few minutes.

Roll out the dough and spread the fillings all over the dough, brush water on the edge of the dough, then roll it and close the open tightly.

Preheat oven to 180 degree celsius, place the veg roll in the oven tray, egg wash and bake.

Cut the veg roll on a serving plate and serve.
