Prepare the ingredients. Wash them thoroughly. Grate the galangal.

Grind the spice paste ingredients.

Heat a little oil and sauté the spice paste until fragrant. Add the bay leaves, galangal, and chicken. Pour in water. Check the taste. Let it sit until the chicken absorbs the spices or until the water reduces (leave some water for the toasted coconut).

When ready, remove the chicken and set aside.

Add the toasted coconut to the remaining simmering water. Mix well.

Heat oil in another pan and fry the coconut until crispy and golden brown.

Drain. Store in a sealed container to keep it fresh. You can mix it with other dishes like gepuk or fried chicken later 😄

Fry the chicken until golden brown. Arrange on a plate and sprinkle the coconut serundeng on top ☺️
