Wash and chop the spinach. Boil 1.5 cups water with 1/4 th tsp salt and sugar. Dip the spinach in this water and give it a boil. Immediately strain the water and dip spinach in cold water. Strain again and cool completely.

Make a paste of palak leaves with chopped coriander, green chillies,ginger paste and set aside. Mix maida and wheat flour. Soak semolina for 15 minutes with 3 tbsp water and mix while kneading dough. Sprinkle salt,1 tbsp oil in maida.Add the palak paste with the rest of the masalas and knead into a dough. Add 1 tbsp more oil and knead. No extra water is needed.

Divide dough into lemon sized balls and roll into flat puris. Heat oil in a wok and fry crispy green masala puri.

Serve with pickles or aloo curry in breakfast, lunch or dinner or simply as an evening snack.
