Perfect Parsnips

We have been buying our veg from the local farm shop and I have been reminded of just how gorgeous good produce is when cooked simply and well. I usually do parsnips with honey and a bit of vinegar, but we are all out of honey so I used oregano and paprika, with delicious results. #dinnerideas

We have been buying our veg from the local farm shop and I have been reminded of just how gorgeous good produce is when cooked simply and well. I usually do parsnips with honey and a bit of vinegar, but we are all out of honey so I used oregano and paprika, with delicious results. #dinnerideas

Top, tail and peel the parsnips. Carefully cut each parsnip in half and then quarters.

Drizzle with oil and use your hands to turn the parsnips over and coat with oil. Sprinkle with oregano, pepper and paprika.

Roast in the oven at 190 C for 40-50 minutes or until golden and crispy. Season with salt before serving.
