After the shelves were cleared of flour and yeast disappeared from stores, what can you do if you run out of bread and can't or don't want to go out to buy more? Simple... you can make bread without yeast! Yes, this bread rises and gets its structure without any yeast, thanks to the reaction between its ingredients—a real lifesaver when yeast is hard to find! I originally published this recipe a long time ago (who knew how useful it would become!), but I've made a few tweaks to create a version without molasses for a lighter color. Thanks to the whole milk yogurt and flaxseed meal, it turned out amazing! I also made two variations: a basic version and another with coarsely chopped walnuts and sesame seeds on top. This bread is great with both sweet and savory toppings, perfect for making canapés, toasting, or dipping in milk... Try making it yourself and you'll be surprised by how good it is!

In a large bowl, combine the flours, bran, wheat germ, bulgur, baking soda, salt, pumpkin seeds, and sunflower seeds. Mix well until evenly combined.

In a separate bowl, whisk together the milk and yogurt until smooth, then add to the dry ingredients. The dough should be moist, similar to a thick cake batter.

If using, fold in the coarsely chopped walnuts at this stage.

Grease and flour a loaf pan. Spoon the batter into the pan, smoothing the top with a damp spatula. If desired, sprinkle sesame seeds over the surface.

Bake in a preheated oven at 300°F (150°C) with convection for 2 hours. Remove from the oven and let cool in the pan for at least 30 minutes before taking it out.
