Vietnamese Broken Rice with Sweet and Sour Chicken Thighs

Make the tomato sauce: Puree or finely chop the tomatoes, then add them to a pot with fish sauce, minced garlic, chili sauce, and sugar. Cook the mixture until smooth. Score the chicken thighs and pan-fry until golden. Add the chicken to the tomato sauce and simmer until the sauce thickens, then turn off the heat. (Tip: For a thicker sauce, mix some cornstarch with water and stir it into the sauce.)

Boil the greens. Fry the tofu until golden. Chop the greens and cook them into a soup. You can use other vegetables if you prefer, but boiling the greens keeps them fresh and pairs well with the chicken.
