Oat Flour Bread

Right now, it's not always easy to find flour, especially low-GI flour! So, we need to find alternatives to these ingredients. Thanks to the Instagram account of pasquemaman (which we highly recommend), we were able to solve this problem for our breakfast bread. She offers this recipe with oat bran, but since we ran out, we replaced it with oat flakes.
Additionally, this is another simple and quick recipe.

Preheat the oven to 350°F (180°C).
Mix the oat flour with the yeast and salt. Add the eggs, beaten. Stir in the milk and yogurt. Mix everything well to get a smooth batter.

Pour into a loaf pan and bake for 35 minutes. Let it cool slightly before removing from the pan. Enjoy with a bit of jam or, even better, with peanut butter (which is also missing from our pantry at the moment).
