Dalgona Smoothie

#rainbowweek5 I made this red colour smoothie getting inspiration from the internet trending dalgona coffee where coffee is whipped and layered at the top of a glass ful of milk. I decided to make a healthy smoothie with the ingredients available in my kitchen. I have some dehydrated cranberries in my fridge. Hence I made cranberry smoothie and topped with whipped cranberry compote.

I decided to make a healthy smoothie with the ingredients available in my kitchen. I have some dehydrated cranberries in my fridge. Hence I made cranberry smoothie and topped with whipped cranberry compote.

Take 1/2 cup dehydrated cranberries and 1 cup of cranberry/mixed berry juice in a pan and bring to heat.

Cook in medium low heat until the berries become soft.

Then add in 1/4th cup of sugar, mix and cook until sugar dissolves completely.

Remove from heat and let the compote cool.

Grind the mixture to a fine paste. Cranberry compote is ready now.

In a blender add in 1 cup of thick yoghurt, 1 cup milk,1 banana and half of the prepared compote.

Blend well to make a smoothie.

Transfer the smoothie to 2 serving glasses and keep in the refrigerator to cool.

Now take 1 packet (3 tablespoon)of whipped topping mix in a glass.Alternately you can use 1/2 cup whipped cream.

Take the remaining cranberry compote and mix with 1/4th cup of berry juice. Take 1 tablespoon of compote aside for garnishing.

Add the mixture to the whipping mix and whip with an electrical hand mixer. The whipped compote should be form soft peak.

Keep the mixture in the refrigerator for 15 minutes to cool.

After 15 minutes take out the whipped compote. The mixture will be very thick in consistency. Add in to the smoothie glasses to make a thick layer.

Garnish with little berry compote and cranberry and serve chill.
