Steps

Add 4 spoons oil to pan and splutter mustard followed by urad dal and jeera.

Once it splutters add crushed garlic and curry leaves and fry till garlic is golden brown.

Then add onions and fry till golden brown. Then add tomatoes, rock salt and turmeric powder and cook till tomatoes turn mushy.

Then add drumstick and cook for 5 minutes with lid. Then add other vegetables and cook in the oil for 5 minutes.

Before starting the subzi, cut the jackfruit seeds into half and remove the outer layer and boil the same for 20 minutes and keep it ready.

Add the boiled jackfruit seeds to the masala and stir for 5 minutes. Then add kulambu chilli powder and stir well till raw smell goes off.

Then add 1 cup water and cover with lid and cook the vegetables for 10 to 15 minutes till water dries out.

Now add the coconut saunf paste and stir for 5 minutes and your masala is ready. The paste should not be fine.

Serve hot with chapatis, rotis, phulkas, lemon rice, tomato rice, curd rice etc.
