This is a royal and authentic dish of Rayalaseema district , Andhra Pradesh, most parts of Karnataka. It's a common healthy dish for breakfast or eveing snacks.. Various other names like maramuralu /borugulu /vaggani..it's a simple dish. Generally, Tamil Nadu side we use this main ingredient in Bhel Puri in Which it is just added rawly..so let's see the preparation of this tasty dish. I have done this recipe for 4 ppl.

Ingredients

4 servings
  • 1 kgRIce puff /pori /borugulu/uggani
  • 3medium sized onions
  • 3medium sized tomatoes
  • 2capascicum -any vegetables (additional)
  • as per tasteGreen chillies
  • 1 tablespoonturmeric powder
  • Fewcurry leaves
  • 1 tablespoonmustard seeds
  • 1 tablespoonurad dhal
  • 1 tablespoonroasted chenna dhal
  • As per tasteSalt
  • as requiredOil
  • Forbajji-
  • 10green chillies
  • as requiredbajji bonda mix
  • 1 spoonbaking soda
  • As per taste Chillies powder
  • 1/2 tspgaram masala powder
  • as per tasteSalt
  • as requiredOil for fry
  • ForStuffing in bajji-
  • 100 gmstamarind
  • 50 gramsroasted chenna dhal
  • as per tasteSalt
  • as per tasteChilli powder

Steps

    First, take a pan, put oil. Once oil gets heated, put mustard seeds, urad dhal, gram dhal curry leaves and chillies and fry it for 5 seconds. After that add onions fry till light golden brown..then tomatoes, turmeric, Salt. And fry it until your tomatoes are cooked. The. Add capsicum and fry it. Meanwhile, side by side just soak the rice puffs in water for 3 mins and drain it.

    Once it is fried, turn off the stove, and mix the fried ingredients into the drained rice puff and mix it. Garnish with coworkers and lemon on the top. Now uggani is ready.

    Next stuffing preparation for bajii. Take a nice jar, add above measured amount of tamarind, gram dhal, chilli powder, salt, garam masala. And little water to grind it into a paste. The other method is just ground tamarind and gram shall separately and mix it. Either method u can use. Take the green chillies slit the green chillies in the middle vertically, remove the seeds and stuff with this mixture and keep aside.

    Bajji preparation-- Take a bowl, add gram flour/bajjibonda mix, chilli powder, baking soda, salt, water and mix it.
    into a bajji consistency.. Now take a pan, heat the oil, once the oil s heated, take each shrugged green chilli dip it in the mixture, put in the oil. And deep fry it so finally bajji is ready.
