Peel and cut into roundels..

Soak tamarind in water

In a pan take 2tbsp oil and fry the ginger pieces till golden and crisp

Crush them using a mixer grinder....

Into the left over oil add fry chilli powder and coriander powder till you get a nice aroma

Squeeze the tamarind and discard the pulp.Now pour tamarind juice and grated jaggery. let it come to a boil.

At this stage add the crushed ginger and stir nicely till everything comes together and you get a thick mixture...

In another pour 1tsp oil splutter mustard then add red chillies and curry leaves...

Pour this onto inji puli and mix nicely
