Pineapple Tiramisu

Pineapple Tiramisu

Cooking Instructions

Prepare the ingredients.

Separate the egg yolks from the whites.

Using an electric mixer, beat the egg whites until stiff peaks form and set aside.

Add the sugar and mascarpone to the egg yolks and mix with the electric mixer until you get a smooth and homogeneous cream.

Gently fold the egg whites into the cream, mixing delicately from bottom to top to avoid deflating the mixture too much.

Now move on to assembling the tiramisu. Start by placing the ladyfingers soaked in pineapple juice at the bottom of a baking dish.

Spread the mascarpone cream over the ladyfingers, then add the pineapple cut into pieces.

Continue alternating the layers (first ladyfingers, then cream, then pineapple) until all ingredients are used up. Finally, decorate with mint leaves. Let it rest in the refrigerator for at least 2 hours.

TIPS: ✔️ You can make a piña colada tiramisu by adding a bit of rum to the pineapple juice and 5 tablespoons of shredded coconut to the mascarpone cream. ✔️ With the same recipe, you can make individual servings to make the tiramisu easier to serve.

MISTAKES: ❌ Do not soak the ladyfingers too much in the pineapple juice, or they might break and make the dessert too soggy. ❌ Do not overdo it with the mint for decoration, or it will overpower all the other flavors.
