My grandmother use to make the Greek version of gnocchi from scratch. Unfortunately I didn't have a chance to get the recipe from her..so I use the premade kind and reminisce about when my aunts and cousins would gather to eat them fresh in her tiny Brooklyn apartment voula.g -

This recipe is a blast! It looks soooo restaurant-ey, that it is hard to believe how easy it is to make! You will need an oven large enough for two baking trays to fit in at the same time, either side-by-side or on different levels. Felix Cortes -

So, I saw some Swiss chard in the store. I honestly don’t buy it that often but I remembered seeing some kind of creamy Swiss chard before and wanted to take a stab at it. I was not trying to make pasta, didn’t have any boxed pasta and I didn’t feel like rice. I had a package of gnocchi and it was on like popcorn. Karl -

Gnocchi, mushroom, and blue cheese bake Gnocchi, mushroom, and blue cheese bake
As fun as it it to cook every day, it's nice to take a breather once in a while and find shortcuts to ease the work. That happened this afternoon, as I brainstormed for a way to combine leftover gorgonzola we had in the fridge with some mushrooms a neighbour brought over. It might be because my brain is still in Italian mode (per my last recipe for pasta and chicken), but it occured to me that I could add gnocchi to the mix and eliminate prepping a separate starch dish entirely. And so this gnocchi, mushroom, and blue cheese bake was born. Unlike said previous recipe, this dish wasn't quite as straightforward, but it was equally delicious. Maybe moreso, seeing as my wife helped herself to three servings. Robert Gonzal
