A pantry cupboard based pasta for lunch - this French Onion Inspired Pasta is not the healthiest but super easy and delicious! Definitely hits the spot 🎉 Very budget friendly with only a couple of ingredients that you probably already have!

Ingredients

2 servings
  1. 1 1/2 cupsdried penne or other pasta shape
  2. 1white onion
  3. 60 gbutter
  4. 1 1/2 tbspplain flour
  5. 1 1/2 cupsmilk (semi-skimmed or whole)
  6. 1/2 tspbrown sugar
  7. Salt and fresh cracked black pepper
  8. To serve
  9. Parmesan
  10. Parsley

Cooking Instructions

    Cut the onion in half and then finely slice.

  2. 2

    Saute in the butter over a medium heat until soft and caramelised, stirring to stop burning.

    Whilst the onions are caramelising, start boiling the pasta in salted water.

    Add the brown sugar and stir in with the onions, they should look golden and jammy.

    Stop the pasta when it is just before al dente.

  6. 6

    Whisk the flour into the butter/onion mix.

  7. 7

    Once the flour is cooked out and the mix has become a pasta, add the milk and whisk.

    When the sauce is thick and lovely, stir in the pasta with about a tablespoon of pasta water.

    Season to taste with salt and pepper then serve with parmesan and parsley.
