Great for pancakes and also toasted bread or whatever goes with your syrup
Cooking Instructions

Add half cup of sugar to a pan over high heat
- 2
Add half cup of water to the sugar then stir till it turns golden brown
- 3
Add the remaining cup of sugar
- 4
Then add the boiling water then stir
- 5
Add the quarter piece of lemon to the boiling mixture, this prevents the sugar from crystallizing
- 6
Reduce the heat to low and let it simmer for 45 minutes
- 7
Sieve into a jar and let it cool for an hour

In June you can find blooming elder everywhere here. In parks, gardens or at forest borders. I love the fragrance of the umbels and they make a very fine syrup. When I go out to collct the umbels I make shure not to harvest the whole bush but to only pick three to four umbels per bush. I am very lucky to have some of these bushes in my family and friends gardens and they let me pick the flowers in exchange of some syrup. Storebought elderflower syrup is fine but it is more fun and luscious to make it yourself.
