#budgetbasics On Monday Easter for lunch, I started to prepare a simple family's meal, we were still in lockdown and have to stay home for safety, so I use whatever I found in the pantry and fridge.

In a wok fill with hot oil, cook the onions for 2' then add garlic & the marinated chicken & cook until lightly brown on both sides,then add the cherries tomatoes, sprinkle on top with salt 'n black pepper and continue stir fry for 3', Then Remove, transfer into a small bowl and keep aside.

Then cook the bacon in the wok, when is cooked then remove, set aside. Then in the same wok that has still the oil, add the Red Capsicum, Mushrooms, Red chilis & Spring onions and stir-fry for furthern 3'.

In the same wok add 1/2 cup oil, heat and add the leftover cooked Potatoes and stir-fry for another 3 minutes. Remove and put them into a medium size bowl and set aside.

In a big bowl put the eggs, beat them well with a fork then add 2 tbs milk to dilute (eggs wash) and mix again then add the dry ingredients: smoke paprika, cayenne pepper, salt, crushed black pepper, parsley leaves and mix all together with a big spoon. Then add the double cream and the cooked chicken and mix well all together with a big spoon.

Then lastly put the Self-raising flour into the eggs mixture and with the big spoon mix them all gently, but at this stage don't over mix! If the mixture is too thick then dilute with 2 Tbs milk. Pour over the mixture into the prepared Flan or Pie dish. Sprinkle on top surface with the grated Cheese.

Bake in a preheated oven at 200 degrees (C) for 20-25 minutes until light brown & firm in the centre. (Test the center by a knife inserted on top centre. If it comes out not clean, then the Quiche is not cook and do bake an additional 5 minutes). Remove from oven and let stand for 5-10 minutes before turning out and serving. Spread on top the cooked fried Bacon pieces.

Decorate on top centre with Coriander leaves. To serve: with a bowl of raw salad. Enjoy 😗For individual cut the Quiche into 6 portions and put the fried Bacon spreading on top of the Quiche pieces and place an individual side dish, a small plate of green mixed salad. Cheers😋
