Ingredients

4 servings
  • 6Bacon rashers, fried first then cut in small rectangular size
  • 1Breast chicken cut into cube, marinated for 15 minutes in a
  • mixture of 1/2 cup Teriyaki sauce, 1/2 lemon juice, salt,
  • Juice of 1/2 lemon or kaffir lime juice
  • 1 1/2 cupleftover cooked Roasted Potato, cut into tiny cubed
  • 2 cupsCooking Rice Bran oil
  • 1large white Onion chopped finely
  • 3garlic cloves, smashed then minced finely
  • 1red capsicum cut into small rectangular pieces
  • 3bottons mushrooms, diced 1 cm thick
  • 5fresh Red chilis, deseeded, dice finely
  • 2Spring onions, green part diced thinly
  • 10Cherries tomatoes. Cut in half each
  • 6eggs, well beaten
  • Then add 2 tbs cold milk (egg wash) and stir. Then
  • add the following 5 dry ingredients: 1 tsp Cayenne pepper,
  • 2 tspsmoke Paprika, salt, crushed Black pepper
  • & 1 cup fresh Parsley leaves, finely chopped
  • 1 cupdouble Cream
  • 1/2 cupSelf-raising Flour
  • 1 cupgrated Cheddar Cheese
  • Grease lightly the base& side a 30 cm deep Flan dish or Pie dish
  • For the Garnished: a stalk of fresh Coriander leaf
  • Side dish:
  • 1small bowl of raw mixed salad
  • toss with an Italian salad dressings: a mixture of 1/4 tsp salt,
  • 1/ 2 tbs Balsamic Vinegar& 1 tbs Italian Extra Virgin Olive oil

Steps

    In a wok fill with hot oil, cook the onions for 2' then add garlic & the marinated chicken & cook until lightly brown on both sides,then add the cherries tomatoes, sprinkle on top with salt 'n black pepper and continue stir fry for 3', Then Remove, transfer into a small bowl and keep aside.

    Then cook the bacon in the wok, when is cooked then remove, set aside. Then in the same wok that has still the oil, add the Red Capsicum, Mushrooms, Red chilis & Spring onions and stir-fry for furthern 3'.

    In the same wok add 1/2 cup oil, heat and add the leftover cooked Potatoes and stir-fry for another 3 minutes. Remove and put them into a medium size bowl and set aside.

    In a big bowl put the eggs, beat them well with a fork then add 2 tbs milk to dilute (eggs wash) and mix again then add the dry ingredients: smoke paprika, cayenne pepper, salt, crushed black pepper, parsley leaves and mix all together with a big spoon. Then add the double cream and the cooked chicken and mix well all together with a big spoon.

    Then lastly put the Self-raising flour into the eggs mixture and with the big spoon mix them all gently, but at this stage don't over mix! If the mixture is too thick then dilute with 2 Tbs milk. Pour over the mixture into the prepared Flan or Pie dish. Sprinkle on top surface with the grated Cheese.

    Bake in a preheated oven at 200 degrees (C) for 20-25 minutes until light brown & firm in the centre. (Test the center by a knife inserted on top centre. If it comes out not clean, then the Quiche is not cook and do bake an additional 5 minutes). Remove from oven and let stand for 5-10 minutes before turning out and serving. Spread on top the cooked fried Bacon pieces.

    Decorate on top centre with Coriander leaves. To serve: with a bowl of raw salad. Enjoy 😗For individual cut the Quiche into 6 portions and put the fried Bacon spreading on top of the Quiche pieces and place an individual side dish, a small plate of green mixed salad. Cheers😋

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
