Arepas with Scrambled Eggs and Ham

Method
In a mixing bowl, combine the pre-cooked cornmeal with water and salt. Mix well until there are no lumps.
Let the dough rest for 5 minutes. - 2
Divide the dough into 4 balls and flatten each into a round patty.
Lightly grease a skillet or griddle with a little oil.
Heat the skillet or griddle and cook the arepas over low heat for about 8 minutes on each side, until both sides are golden brown. - 3
When the arepas are warm, use a knife to slice them open horizontally, but only halfway through. Continue opening toward the bottom, leaving the edges attached.
Fill with your desired filling. In this case, we are using scrambled eggs and ham. - 4
Method
In a skillet, heat the oil over medium heat and sauté the garlic, onion, bell peppers, and cilantro.
Add the ham and heat through.
Add the beaten eggs and stir until just set.
Fill the arepas with the scrambled eggs and ham.
