Matar basically translates to green peas and chuda is flattened rice. Green peas are available in abundance in winters. The freshly harvested peas are sweet, crunchy and full of nutrients. So this recipe is a splendid fusion of two locally available ingredients into one wonderful union. What makes this recipe so unique is the special matar chuda masala, it is an amalgamation of hot spices like black cardamom, black pepper corns, cumin, etc. You can buy a ready-made preparation of this masala powder or make it from scratch at home. Savor it with a cup of adrak wali chai or ginger tea. It is great as breakfast or as an evening snack.

Ingredients

  1. 2 cupsFlattened rice/poha:
  2. 1 cupGreen peas: (boiled)
  3. 2 tbsp + 1 tbspGhee:
  4. 1 tspCumin seeds/jeera:
  5. 2 tbspGinger: grated
  6. 2 tbspChura matar masala:
  7. 1 ½ tspSalt: or to taste
  8. 1/2 tspSugar:
  9. 5 tbspGreen coriander: chopped

Steps

  1. 1

    Transfer the flattened rice/poha to a colander and wash with plenty of water. Leave it in the colander.

  2. 2

    In the meanwhile, heat 2 tbsp of ghee in a wok/kadai, add cumin seeds let them turn light golden. Add the ginger and sauté till they also turn slightly golden.

  3. 3

    Add the peas and mix. Fluff up the poha with a fork and add it to the peas mixture.

  4. 4

    Sprinkle salt and the chura matar masala, mix well.

  5. 5

    Finally add the sugar, green coriander and 1 tbsp of melted ghee. Give it a nice toss and serve immediately with a cup of adrak wali chai.
