Gather all the ingredients. Except for the ghee and butter, mix everything into the flour and knead with water. Be careful not to add too much baking soda, as it can make the roti turn red. Do not use more than needed.

The dough should be neither too stiff nor too soft. Rub a little oil on the dough, cover, and let it rest for 10 minutes.

Divide the dough into 8 equal portions. The rotis should not be too thin. After rolling out each roti, lightly brush water on one side.

Place the roti on the skillet with the wet side down so it sticks. When you see some bubbles forming, hold the skillet by the handle, invert it over the gas flame, and rotate to cook the roti evenly on all sides.

To cook the edges, tilt the skillet slightly. Once the roti is cooked, brush with ghee or butter and garnish with finely chopped cilantro, if desired.

Tandoori roti is ready to serve with dal makhani and yogurt.
