Ingredients

Makes 8 rotis
  • 1 1/2 cupswhole wheat flour (about 180 grams)
  • 1/2 cupall-purpose flour (about 60 grams)
  • 1/4 cupplain yogurt (about 60 grams)
  • 2 pinchesbaking soda
  • 1 teaspoonpowdered sugar
  • 1 tablespoonoil (for mixing into the dough)
  • 1/2 teaspoonsalt
  • Water, as needed, for kneading
  • Ghee or butter
  • Skillet with handle

    Gather all the ingredients. Except for the ghee and butter, mix everything into the flour and knead with water. Be careful not to add too much baking soda, as it can make the roti turn red. Do not use more than needed.

    The dough should be neither too stiff nor too soft. Rub a little oil on the dough, cover, and let it rest for 10 minutes.

    Divide the dough into 8 equal portions. The rotis should not be too thin. After rolling out each roti, lightly brush water on one side.

    Place the roti on the skillet with the wet side down so it sticks. When you see some bubbles forming, hold the skillet by the handle, invert it over the gas flame, and rotate to cook the roti evenly on all sides.

    To cook the edges, tilt the skillet slightly. Once the roti is cooked, brush with ghee or butter and garnish with finely chopped cilantro, if desired.

मै मूल रूप से राजस्थान से हूं और मुझे पढ़ने और पढ़ाने का शौक है। यही कारण है कि MA, MPhil, Aacharya, PhD करने के बाद भी अभी जैन दर्शन में शास्त्री कर रही हूं। पर जब भी खाना बनाती हूं तो वो भी पूरे दिल और दिमाग से बनाती हूं। जैन भजन या प्रवचन चलाकर मै कुकिंग करना पसंद करती हूं। मै जैन डाइट का पालन करती हूं , इसलिए जैन रेसीपी ही बनाती हूं। मैं सभी मसाले, आटा, बेसन भी घर पर ही स्वयं बनाती हूं। ये सभी चीजे क्योंकि ताजा ही होते हैं इसलिए मेरा जैन फूड मेरे परिवार, दोस्तो को बहुत पसंद आता है। मेरे अपार्टमेंट में मेरे हाथ की बनाई मिठाईयां बहुत प्रसिद्ध है। लोग उनका मुझे ऑर्डर भी देते हैं। स्वास्थ्य ठीक रहा तो उन लोगो को जरूर बना कर देती हूं। मै बहुत सारे कुकिंग शो सालो से देखती आ रही हूं पर रेसीपी अपने तरीके से अपने परिवार के हिसाब से बनाती हूं और अब वही लिख देती हूं। मेरा पूरा प्रयास रहता है कि जो भी रेसीपी लिखूं तो वो अपने आप में पूर्ण हो और उसको देखकर बनाने वाले को, बनाने में आसानी हो। रेसिपी लिखते ज्यादा समय नहीं हुआ है। मार्च 2020 से cookpad की सदस्या बनने के बाद से ही हिन्दी में रेसीपी लिखना शुरू किया है।
