Simple Grilled Vegetables
Something SO easy to do and tasty!
Cooking Instructions

Wash all vegetables, dry and dry them. Thinly slice the carrot, radish, and eggplant.

Roughly chop the onion leek and the bell pepper. Peel the onions and quarter them. Peel the garlic and slightly crush them, not FULLY crushing them.

Combine all vegetables in a bowl and toss them with dried thyme, Italian seasoning, salt, and pepper. Afterwards, coat them in olive oil and marinade for about 30 minutes.

After 30 minutes, grill your vegetables either on a grill pan or any other grill of your choice. ☺️

Another easy recipe and so easy to cook. I don't usually use an exact measurement for the ingredients I use, as cliche as it sounds I am measuring with my heart lol! So trial and error is the way to go but in my opinion you'll hardly go wrong with this. For this recipe I uses abit more ingredients other than Italian herbs for abit more flavor but really all you really need is the Mixed Italian Herbs by McCormick for that wonderful flavor, anything else is just extra. As for the vegetables I steamed it in the microwave, it's so quick and easy and it retain all the goodness of the veges as opposed to boiling it in water where you loses all the nutrition, it tastes better too.
