Ingredients

  • Fish (sitingray or red snapper)
  • 4Ladies fingers (okra)
  • Aubergine (optional)
  • 1tomato
  • Salt
  • Sugar
  • A fewleaves of Curry (optional)
  • A fewleaves of Kaffir Lime (optional)
  • Paste
  • 2 clovesgarlic
  • 1thumb of blue ginger
  • 4shallots
  • 2lemongrass ends
  • 20dried chilli (soaked and seeds removed)
  • 10 gbelachan (shrimp paste)
  • 1 tbspturmeric powder
  • Tamarind Juice
  • 2 tbspTamarind paste (soaked in hot water)
  • 500 mlwater
  • Tamarind peels

Steps

  1. 1

    Gather all the ingredients. Blend the ingredients for the paste till smooth else you’ll have to drain the chunky bits out later.

    Heat oil in pan. Stir fry paste till fragrant. Add the tamarind juice and peels.

    Finally, add the vegetables and fish. Cover to steam and let the flavours infuse for a few minutes.
