Ingredients

  1. 5 piecescatfish (or other firm white fish)
  2. 2 tablespoonsred curry paste
  3. 1small bottle (about 1 2/3 cups or 400 ml) coconut milk
  4. Eggplant (as desired)
  5. Thai basil (as desired)
  6. 3 teaspoonssugar
  7. 2 tablespoonsfish sauce
  8. 5red chili peppers
  9. 1/3 tablespoon (1 teaspoon)salt (for soaking eggplant to prevent browning)
  10. 5kaffir lime leaves

Steps

  1. 1

    Scoop out some coconut milk and simmer it in a pot until the oil separates.

  2. 2

    Once the coconut milk has separated, add the red curry paste and cook until fragrant.

  3. 3

    Add the fish pieces and stir-fry until cooked through.

  4. 4

    Pour in the remaining coconut milk.

  5. 5

    Add the sliced eggplant.

  6. 6

    Season with fish sauce and sugar.

  7. 7

    Tear the kaffir lime leaves and add them, followed by the Thai basil.

  8. 8

    Garnish with halved red chili peppers.

  9. 9

    Ready to serve!
