Brown Jasmine Red Rice Salad with Seasonal Vegetables

Red rice is a variety that works well in cold salads. I pair it with seasonal vegetables between spring and summer. This recipe uses asparagus and zucchini as the base ingredients, but it's also delicious with bell peppers, eggplant, and cherry tomatoes. And with Fairtrade rice, it's even better!

Cooking Instructions

Bring water to a boil to cook the rice. Meanwhile, prepare a base for the sauté by finely chopping the carrot and onion, and cut the zucchini and asparagus into small pieces.

Sauté the onion and carrot in a little oil. Once they start to soften, add the zucchini and asparagus. Meanwhile, add the rice to the boiling water and cook for about 25 minutes.

Add the turmeric to the vegetables. Drain the rice and toss it with the vegetables. Serve warm or cold. Enjoy!

I had planned to use some leftover cooked rice to make rice croquettes, but somewhere during the process I realized my rice was too wet to work with, so I changed plans and added watercress to make a rice salad. I thought it would go well with my main dish, chicken piccata. The flavors combined really well with the seasonings.The flavour of the dish will change considerably depending on the variety and ripeness of your tomato. I think an acidic and savoury tomato is better than sweet ones. The dish is best once it has cooled, and the flavours have melded.
