Ingredients

  1. 4 cupscooked brown rice (can be replaced with farro or orzo)
  2. 1/4 cupolive oil
  3. Juice of 1 whole lemon
  4. 1/4 cupfresh parsley chopped
  5. 1 teaspoonoregano
  6. 1 teaspoondill
  7. 1 teaspoonsalt
  8. 1 teaspoonfresh ground black pepper
  9. 20cherry tomatoes quartered
  10. 4 ozcrumbled feta
  11. 2green onions chopped (red onions can be used as substitute for stronger onion flavor)
  12. 4 ozkalamata olives

Cooking Instructions

    In small bowl, whisk olive oil, lemon juice, parsley, oregano, dill, salt, and pepper to create dressinf

    In large bowl, combine remaining ingredients, mix in dressing, and enjoy!

    Note: this dish is best served at room temperature. To eat the next day, place in microwave for 15-20 seconds
