Steps

Wash and soak urad dal for about 3-4 hours.

In a blender add the soaked dal and blend till it's fluffy and thick.

Take it out in a bowl, add roasted crushed jeera,salt,cilantro,grated ginger,onions and chillies and 1 teaspoon oil. Mix and beat the batter well.Keep aside.

Meanwhile in another bowl take the dahi. Beat it. Add sugar as desired. The dahi shouldn't be runny. Be sure it's Creamy.add to it roasted crushed jeera and ajwain.

Heat oil in a kadhai for frying the vadas. Fry them till golden brown. Add them to a bowl of water quickly and soak them for about 5 minutes. If your vadas are bigger in size, apprx 10 mins then.

Gently remove the excess water from vadas, place them on serving plate, pour beaten dahi on top of them.

Sprinkle some red mirchi powder, chat masala,roasted crushed jeera-ajwain, cilantro and sev.. U can add some chutney,i was out of tamarind else would have put it.

Grab a quick bite as they would become soggy if u don't!
