Ingredients

45 minutes
4 servings
  1. 1-10 ouncecan condensed cream of chicken soup
  2. 1soup can filled with 1% milk
  3. 3/4 cupuncooked long grain rice
  4. 1 1/2 tspchili powder
  5. 1 1/2 cupmixture of red/green pepper strips and chopped onion
  6. 1/2 cupfrozen corn
  7. 4boneless skinless chicken breast halves (about 1 pound)
  8. 1/2 cupshredded cheese - Tex Mex or Cheddar and Monterey Jack

Steps

45 minutes
  1. 1

    Mix soup, milk, rice and chili powder in shallow 2 quart baking dish. Spread evenly with vegetables.

  2. 2

    Top with chicken. Sprinkle chicken with cheese and additional chili powder, if desired. Cover.

  3. 3

    Bake at 400 degrees until chicken is cooked through and rice is tender - about 45 minutes. Remove cover and broil until cheese is golden and bubbly - about 3 minutes. Remove chicken and stir rice before serving.

    Serve and enjoy!
