Ingredients

3 servings
  • 1 tbspolive oil
  • 3vegetarian sausage chopped in pieces -
  • (I use the vegetarian butcher's little willies)
  • 80 gQuorn pieces
  • 1small onion (finely chopped)
  • 2garlic cloves
  • 1/2 tspfresh ginger (finely chopped)
  • 1/2 tspchilli powder
  • 1/2 tspturmeric
  • 1 tspsmoked salt
  • 1/2 cupcashew nuts
  • 250 gchinese wok vegetables of choice
  • 1 tbspsoy sauce
  • 1 tsplea & perrins
  • to tastePepper
  • 200 gwok noodles

Steps

  1. 1

    Fry the onion in the olive oil until soft. Add the garlic, ginger, smoked salt, chilli powder and turmeric. Fry for a couple of minutes on a low heat, stirring regularly and adding water if necessary, to avoid sticking.

  2. 2

    Add the sausage and quorn and fry until starting to brown. Add the soy sauce, Lea & Perrins, pepper to taste and cashew nuts and fry at a low to medium heat.

  3. 3

    Meanwhile boil water and add the noodles. Cook for 2 minutes or according to the time on the package.

  4. 4

    Whilst the noodles are cooking, add the wok vegetables to the sausage mix and fry for 4 to 6 minutes.

    Serve and enjoy.
