Italian Creamy Chicken and Mushroom 🇮🇹😍🐔🍄

Great for lunch in winter, a comfort food, an original Italian Chicken in delicious Creamy sauce. Could be added with mushrooms but I don't have it in my fridge. To serve with sliced French bread and Italian raw mixed salad (Radicchio Rugula, cucumber, tomatoes, red onion, celery stalk) and to drink with a glass of red wine as the custom.

Ingredients

4 persons
  1. 2Breast Chicken sliced in halved
  2. 1 cupItalian regional White wine
  3. 1 cupButtons Mushrooms, chopped very finely (I don't have it)
  4. 1/2white onion, finely chopped
  5. 1tbs/50 g butter
  6. 2 tbsRice Bran oil
  7. 2 tbsplain flour
  8. 1 cupChicken broth and
  9. 1chicken bouillon cubes
  10. 1 cupdouble Cream
  11. 4garlic cloves, finely chopped
  12. 1 tspGinger paste
  13. 1/2 tspdried thyme or dried oregano
  14. 1/2 tspnutmeg powder
  15. 1/4 tspcayenne pepper (optional)
  16. 2 tbsCapers in olive oil in a jar, chopped in half (as garnish)
  17. Himalayan pink salt
  18. Grinded black pepper, plenty
  19. Garnish:
  20. 2Lemons, cut into a thick slices
  21. Side dish:
  22. 5 cmFrench bread, spread with garlic butter, wrap in foil, cut
  23. 1mixed Raw salad toss with Vinaigrette dressing & PureOlive Oil
  24. 50 gFeta Cheese cut into cubed, for salad

Steps

  1. 1

    Preheat oven to 350 C. In a wok put the butter & saute the onions on medium heat. Add the chicken pieces and fry chicken over high heat just turn brown and then flip over, don't worry if it's not completely through. Remove from pan, set aside.

    Lower to medium, add 1 tbs Rice Bran oil and butter, then add the mushrooms (I don't have them here) and stir-fry for 1'. Then add the fresh garlic minced & ginger paste. Add 1 tbs flour and cook over low heat and stir 2 ' until thick paste forms.

    Slowly stir in the stock, add 1 cube chicken stock, simmer for 1' then pour in the cream. Add the chicken with the fried onions back into the saucepan, add 1 cup Italian white wine and cook 3' stirring then add dried thyme or the dried oregano, a pinch of cayenne pepper (optional), nutmeg, season with salt & pepper. Simmer and keep stirring occasionally. When chicken is cooked then turn off, remove saucepan. As garnish: Put some lemon slices here and there among the cooked chicken.

    Sprinkle on top of chicken with some chopped Capers (in oil). Ready to serve. To serve with a French bread, warm in the oven for 15 minutes on medium heat 180 C then sliced the bread 5cm long. Place a side dish, a bowl of mixed salads toss with vinaigrette & Olive oil dressing and serve and with warm French Bread. Drink with a glass of red wine as custom in Italy. 😙🍾🥂 Buon appetito!

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
