It's a French classic dessert. Its very fast and easy to make. The batter on top is flavoured & nourish better than the crumble or other bought sponge cake. Could use stone fruit stone sliced, plums, rhubarb, frozen or tin fruits.

Preheat oven to 180C degrees. Lightly grease a rectangular ovenproof baking dish. Peel the apples and diced into small pieces, arrange spreadly on the base of the baking dish, the scatter the lemon juice on top and sprinkle with icing sugar and then tip the Berries on top of the apples, scatter over the lemon zest then drizzle the running honey or golden syrup over the top Mixed Berries.

To make The Top batter: In a big bowl sift the flour, pinch of salt and soft brown sugar. Make a well in centre, put the 3 beaten eggs into the well, add vanilla essence and mix together and then gradually draw the flour into the eggs from the outside of the well, mixing well, then beat in 1 cup milk a little at a time to form a smooth batter.

Pour the batter over the bluberries and bake for 40' or so, until golden and puffed up. As a dessert serve warm, or cold. Cut into big slice, put onto a serving plate and serve with a dullop of whipped cream or vanilla ice cream.😋🍯🍰🍨🍸🍹
