Prepare the ingredients: Peel and finely chop the carrot. Soak the wood ear mushrooms, then finely chop. Wash and slice the green onion. Mix these with the ground pork and refrigerate for 30 minutes.

Lightly brush the dumpling wrappers with vegetable oil.

Cover with plastic wrap and set aside.

Stack the oiled dumpling wrappers together and roll them out with a rolling pin to form one large sheet. After rolling, gently separate them one by one.

Peel and devein the shrimp, rinse, and pat dry with a paper towel. Prepare the meat filling and dumpling wrappers.

Lay out a dumpling wrapper. Place 1 teaspoon of meat filling and 1 shrimp in the center, then cover with a little more meat filling so the shrimp is wrapped in the pork mixture.

Roll up the dumpling wrapper with the filling inside.

Seal the edge with a paste made from equal parts all-purpose flour and water (1:1). Place seam side down and set aside.

Heat a pan and add vegetable oil. Once hot, add the surf and turf rolls to the pan.

Pan-fry until golden brown and slightly crispy, then flip and cook the other side. Continue frying until the filling is cooked through and both sides are golden and crisp.

[Tips]
* Dip in ketchup or sweet chili sauce for extra flavor.
* For the flour paste, mix all-purpose flour and water in a 1:1 ratio.
* You can substitute tofu skin for the dumpling wrappers.
