Peel and crush the garlic

Slice about 15 grams of fresh ginger

Slice the orange thinly

Roughly cut the rest of the ginger and throw it into the blender

Add water until it's just covering the ginger and then blend into a smooth paste

Add 4 Dessert spoons of oil into a pan and the hob add cinnamon, star anise and cloves

Cook out a little and add the chopped ginger

Allow to cook and then add all of the garlic ensuring the garlic doesn't burn

Add the vinegar and turn the hob to full

Add tomato puree, ginger slurry, oranges, water and squash

Add the sugar, stirring to ensure the sugar dissolved

Stir regularly until the liquid begins to boil

Once boiling reduce the heat to a simmer and cook for 30-45 mins checking the water level and stirring regularly

Allow to cool and refrigerate for 24 hours minimum before desired usage!

When time for cooking has finally come, we are gonna need to thicken the sauce! Sofirst take a portion from the mixture and put it through a fine seive into a pan

To thicken the sauce take a couple tbsp corn flour and dissolve it in a small amount of water until you make a thick liquid this can then be added to your sauce over heat until desired thickness has been achieved!
