Steps

Prepare all the ingredients and have them ready.

Heat a pan over medium heat and add the vegetable oil. Once hot, add the minced shallot and diced tofu. Stir-fry until fragrant. Crack the eggs into the pan and scramble until cooked.

Add the Pad Thai noodles and Pad Thai sauce. Stir everything together until the noodles are soft and cooked through. (You can find the Pad Thai sauce recipe on my profile page.)

Sprinkle with chili powder and both types of dried shrimp.

Add the raw bean sprouts, chopped chives, and ground roasted peanuts.

Mix everything together until well combined.

Serve and garnish as desired with extra raw bean sprouts, chopped chives, green onions, ground roasted peanuts, and lime. You can also add sugar or chili powder to taste.
