Ingredients

4 persons
  • For Chicken marination:
  • 600 gChicken pieces, flattened & some drums that give flavour
  • 1 tspSalt
  • 1Lemon juice
  • 1 tbsolive oil
  • 1 tbsTomato paste
  • 1 canwhole tomato
  • 1large onion, chopped
  • 4Garlic cloves, minced
  • 2 inchfresh ginger sliced thinly
  • 2 stalksCelery, chopped coarsely
  • 4lime-kaffir leaves, teared the edge
  • 1 tspCayenne pepper powder
  • 1 tspCardamom powder
  • 2 tbsWorcestershire sauce
  • to taste Salt and black pepper
  • 6Mint leaves or
  • 1 handfulParsley leaves, chopped
  • Side dish:
  • 1 bagfresh Spinach
  • 4 bunchesBok Choy cut in half or quartered pieces
  • 1small white onion, chopped finely
  • 2 tbsRice Bran Oil
  • Steam fluffy Jasmine Rice:
  • on a large individual plate,place the rice in centre,around edge
  • decorated with a few cucumber slices,
  • fresh tomato slices & some lettuce

Steps

    Flattened the chicken, spread salt, lemon juice and oil on both sides and set aside for 10'

    In a wok put the 3 tbs oil, heat add the onions and stir fry for 2' then add the garlic minced, fresh sliced ginger & then add the chicken and stir-fry for another 3', then add the 2 cups water, bouillon cubes, whole tomatoes, tomato paste, celery stalks cut in pieces, cayenne pepper powder, worchestershire sauce, cardamom, salt, black pepper and let it boil then simmer slowly. On the last time one minute of cooking add a handful of chopped parsley and turn off the heat. Remove from the stove.

    Prepare the side dish, stir-fry vege. In a wok heat 2 tbs oil, add the onion and sautee' for 2' then add Bokchoy, pinch of salt and black pepper, and stir-fry for another 2'. In a saucepan non stick put 1 tbs water from the kettle, heat, add Spinach and a oinch of salt. Remove, transfer into a small serving bowl.To serve: on individual plate put as bed the hot Jasmeen rice then top put the Chicken in gravy. Side dish the stir-fried Bokchoy and Spinach 😍😋🌿🐥🍜🍋🍅🌶🍋

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
