This pesto, made with added spinach, has a beautiful, bright green color and won’t turn black from basil oxidation. You can adjust the amount of spinach to your liking. I made it with pine nuts left over from making baked apples and spinach left over from making lentil and spinach soup.

  • Pine Nut and Spinach Pesto
  • 1/2 cupcooked pine nuts (about 60 grams)
  • 4garlic cloves
  • 1 cupfresh basil leaves (about 25 grams)
  • 1 cuptightly packed fresh spinach (about 30 grams)
  • 1 tablespoonlemon juice
  • 1/4 teaspooncrushed black pepper
  • 1/2 teaspoonsalt
  • 1/2 cupolive oil (about 120 ml)
  • 3 tablespoonsgrated Parmesan cheese (about 20 grams)
