Ingredients

30 mins
6 servings (1 cup ea)
  1. 2 cupsyour favorite pasta (uncooked)
  2. 1 1/2 cupscherry or plum tomatoes (halved)
  3. 1 1/2 cupscucumber (peeled and cubed)
  4. 1/2 cupred onion (sliced and cut about an inch long)
  5. 1/8 cupfeta cheese crumbles
  6. 1/8 cupGreek olives (sliced)
  7. 1/16 cupshaved Parmesan
  8. Dressing:
  9. 1/4 cupOlive Oil (or other neutral oil)
  10. 4 tbsred wine vinegar
  11. 1 tbsfresh squeezed lemon juice
  12. 2 tspgarlic (minced)
  13. 2 tspdried oregano
  14. 1 tsphoney
  15. 1/2 tspkosher salt
  16. 1/2 tspfresh cracked black pepper
  17. 1/2 tspcrushed red pepper

Cooking Instructions

    Cook pasta to package directions. Drain and wash with cold water and let cool.

    Combine all dressing ingredients and whisk to fully mix.

    Add all chopped veggies, cheeses and dressing to cooled pasta and toss. Refrigerate for at least an hour before serving. ENJOY!!
