5 ingredient carrot cake bites 🥕🥕(No sugar, No flours, No Dairy)

Super delicious and easy!! This is very crumbly though but we loved it. Naturally sweetened with just bananas and carrots. If you want it a little sweeter, you can drizzle honey on top! Made with whole ingredients. Substitute almond meal with Oat flour (Blended oats) if that works for you. Optional - Frosted with Greek yogurt (strained overnight)! I am lactose intolerant but full fat strained Greek yogurt works well for me.

Cooking Instructions

Purée or shred carrots. Set aside. I only have a stick blender and have to pulse it serveral times in small batches. It works though :)

Blend bananas and eggs. Set aside.

Mix almond flour and coconut together. Add in banana and egg mixture. Than fold in carrots and any optional add-ons.

Bake at 200 degrees for 40-45 mins. I made mine in a small loaf pan. Makes about 8 square bites.

Rather than thinking of this is a snack, it's better to think of it as a health food full of fibre!I wanted to eat a cake with as little oil and amazake as possible, plenty of carrots, fruit and, nuts and zero added sugar!You can change the oatmeal for the same amount of powder ingredients if you like. You can use rye flour, buckwheat flour, cornmeal, rice flour, bran, or wheat germ instead, whatever takes your fancy.If there isn't a lot of liquid in the carrots, your mixture may end up a bit dry and hard. My first daughter hated carrots. I thought she might not notice if it was in a snack. My daughter ate it, and my grandchilden ate it. I've been making this cake for over 20 years.The amount of the grated carrots does not have to be exact. You will not notice it.
