Fried Rice with Luncheon Meat

Ingredients

Serves 3 people
  1. 4 cupsleftover steamed rice
  2. 6 slicesluncheon meat
  3. 2eggs
  4. 3medium red onions
  5. 3 clovesgarlic
  6. 3 tablespoonsoil
  7. Any other leftover items like chai poh topping for chwee kueh
  8. Soya sauce
  9. White pepper
  10. Garnish
  11. Spring onions
  12. Fried shallots

Cooking Instructions

  1. 1

    Loosen up leftover rice. Chop up garlic and onions.

  2. 2

    Dice the luncheon meat.

  3. 3

    Heat up oil in wok, then fry the garlic and onions before adding in luncheon meat, rice and any other leftover items.

  4. 4

    Either crack the eggs straight into the wok or beat them in a bowl with soya sauce first.

  5. 5

    Continue stir-frying the rice, adding in soya sauce and white pepper to taste. Garnish with fried shallots and spring onions to serve.
