Ingredients

  1. 1/2 cupwarm water (120 ml)
  2. 2 teaspoonsyeast
  3. 2 teaspoonshoney (used to feed the yeast)
  4. 1 1/2 cupsalmond flour (168 grams)
  5. 2/3 cupground golden flaxseed (83 grams)
  6. 3 tablespoonsground psyllium husk (18 grams)
  7. 2 teaspoonsxanthan gum
  8. 2 teaspoonsbaking powder
  9. 1 teaspoonpink salt
  10. 1/4 teaspooncream of tartar
  11. 1/8 teaspoonground ginger
  12. 1large egg
  13. 1/2 cupegg whites (110 grams)
  14. 1/4 cupmelted butter (56 grams)
  15. 1 tablespoonapple cider vinegar
  16. 1/4 cupsour cream (58 grams)

Steps

    Mix the yeast and honey in warm water, stir well, cover with a cloth, and let it sit for 7 minutes until the yeast becomes frothy like cream.

    Combine the dry ingredients: almond flour, flaxseed, psyllium husk, baking powder, salt, ginger, cream of tartar, and xanthan gum. Mix well and set aside.

    In a mixing bowl, add the egg, egg whites, melted butter, apple cider vinegar, and yeast mixture. Beat until frothy, then gradually add the dry ingredients in two parts, alternating with the sour cream. Beat until smooth, then knead the dough, shape it, and place it in a baking pan lined with parchment paper. Cover with a cloth and let the bread rise to the edge of the pan.

    Preheat the oven to 350°F (180°C), then increase to 375°F (190°C) and bake for 40-50 minutes, depending on your oven. Let it cool for 5 minutes before removing from the pan, then cool completely on a wire rack before slicing.
