Even though this is a very simple dish, I absolutely love it! It’s super quick to make and works great as an appetizer or a main course. They stay soft and moist inside with crispy edges.

Even though this is a very simple dish, I absolutely love it! It’s super quick to make and works great as an appetizer or a main course. They stay soft and moist inside with crispy edges.

First, wash and trim the zucchini, then grate it using a box grater with large holes.

Make the batter: Beat the egg with salt, pepper, grated Parmesan, rice milk, chopped leek, and chopped parsley. Add the grated zucchini, then mix in the rice flour.

You should have a thick batter. Adjust salt if needed.

Line a baking sheet with parchment paper. Spoon 1 or 2 tablespoons of the mixture at a time onto the sheet to form small rounds, depending on the size you want.

Drizzle a little olive oil over the fritters and bake in a convection oven at 350°F (180°C) for 30 minutes. If they start to brown too much, switch to regular bake mode for the last few minutes.

Remove from the oven and serve right away. They’re also delicious at room temperature. I served them with a Greek yogurt and herb sauce.
