First, make paneer from milk or use store-bought paneer. Cut the paneer into small or large pieces, or any shape you like.

Place a pan or deep skillet on the stove. Add the sugar and water. Once the sugar dissolves, add the paneer pieces. Keep the heat on medium-low and stir occasionally. Do not cover.

After a while, you’ll notice the paneer changing color. If needed, add a little more water. Cook on low heat until the paneer turns a deep golden brown. Once it’s dark brown, remove the pieces from the syrup. When cooled, the outside will be firm and the inside soft.

Chhena Khurma turns out great! You can make it anytime and store it in the fridge for up to a week.
