Steps

Take a large pan and put 2 tablespoon olive oil and shallow fry the chicken on high heat till the chicken is caremalised on high heat for 15 minutes

Add the vegetables and fry with the chicken till the vegetables are mildly soft

Add smashed and finely chopped garlic,tomato pure,smoked paprika,salt and pepper and fry for another 2 to 3 mins

Add the chicken stock and a bit of saffron and mix all the elements together

Add the rice in the stock and cook on low heat for 20 mins or till the rice and chicken is cooked and all the stock is evaporated

Garnish with red,yellow and green bell peppers,green chillies,coriander and spring onion and serve hot
