Ingredients

6 people
  • 200 gsugar
  • 220 gbutter
  • 15 gbaking powder
  • 5 gbicarbonate of soda
  • 1/4 tspsalt
  • 5 gvanilla essence
  • 5overripe bananas (1 for topping)
  • 350 gplain flour

Steps

  1. 1

    Preheat oven to 200’C

  2. 2

    Mix all the ingredients except bananas and flour.

  3. 3

    In a separate dish mash all the bananas but keep one for the topping.

  4. 4

    Add bananas to cake mix and mix through.

  5. 5

    Sieve your plain four and gradually add to mixture.

  6. 6

    In a greased cake tin pour your mixture into it. Rest for 5 minutes

  7. 7

    Place a shallow dish with an inch worth of water at the bottom of the oven.

  8. 8

    Bake the loaf for 20min at 200’C.

  9. 9

    Lower oven to 180’C and bake for further 40 minutes.

  10. 10

    Take out of oven and let cool.
