Boil, peel, and mashed potatoes. add salt. Chop carrots, beans, capsicum into very fine pieces.

Heat 2 tablespoon oil, Fry the carrot, Beans, Capsicum well. Add mashed potatoes. Now add 2 teaspoons cumin powder, Red chilli powder, sprinkle salt to taste.

Take a small amount of the mixture in our palm and roll it to a shape of a finger depending upon the size that we prefer.
Repeat the same for all of the mixture. - 4
Coat each veg finger well with flour and then coat it with cornflour. Then coat it with breadcrumbs.

Now heat enough oil in a kadhai or deep bottom pan. Once the oil is hot gently slide the veg fingers and fry them well on medium-high heat until golden and crisp. Take them out and drain them on absorbent paper or kitchen towel.

Healthy veg fingers are ready to be served.
