My version of Indonesian Nasi Goreng

We have lots of type of Nasi goreng, below is one of our favourite. What make it bit different with other country is we used ‘Kecap manis’ (sweet soy sauce) - picture below - which can be bought online or in asian supermarket. The use of butter is uncommon, but I love this 🥰🥰 especially to scramble the eggs. It’s optional. We usually have Nasi goreng with acar (pickled) and kerupuk (prawn crackers will do). And we ate them together. We would also have ‘ceplok telor’ (fried egg) - not in this recipe.
Making rice a day advance n put them in fridge is always better then just cooked rice.
I sometimes add slices sausages or shredded/slices chicken and onion in my Nasi goreng.

Ingredients

2-3 people
  1. 3 cupsrice (cooked 1 day ahead) - I use Jasmine Thai rice. Basmati is fine
  2. 3 tbspsambal paste (see note)
  3. 4spring onions sliced
  4. 3cherries tomato sliced
  5. 2,5 tbspKecap manis - add when needed
  6. 1 tbspsoya sauce
  7. 2 tbspbutter
  8. 1 tspwhite pepper
  9. 1 tspKnorr chicken powder
  10. 1 tspsesame oil (optional)
  11. 2eggs
  12. 2candlenuts grind smoothly (subtitute with cashew) - optional

Steps

    Sambal paste recipe is in my cookpad, but this can be replace with: 4 garlic and 3 shalllots, 3 chilly. Mince them all till smooth. If you used candlenut, this need to be grill for about a minute of two before grinding.

    Heat the wok in high heat, add 1 tbsp of butter and cracked the eggs, make a scramble eggs, Put asied the eggs. Now, add the rest of the butter, put the sambal (or mince shallot, garlic and chillies) and candlenuts.

    If you dont use sambal, make sure to stir fry this for at least 10 minutes, till its mix and cooked, we need to keep stirring as it is in high heat, Then put the cold rice mixed well. Put the kecap manis, soya sauce, knorr, salt and white pepper, still in very high heat, keep stirring.

    When its all mixed, taste it. The consistency of the rice should be bit dry with a bit of smokey smells.

    When you are sure all good, Add spring onion and tomatoes, mix and done. Enjoy!

    Note: if I dont used pickle, I would mix a bit thinly sliced cabbage in my nasi goreng, and slice some cucumber when serving.

Whether it's a spoonful of sugar or a handful of cabe (chillies), it can only make your food (or live) more exciting. The little Indonesian girl in me reminisces about the spicy flavors of home. Dishes such as Nasi goreng and rendang, transport me 7000 miles back to my home in Jakarta.Arriving in UK, I felt lost. Finding foods that I missed could be quite a challenge.
