Heat a pan with oil and add mustard seeds, a pitch of hing, curry leaves, finely chopped ginger-garlic, turmeric powder and chilli powder. Then add mashed potatoes (boiled and mashed) and salt to taste.

Mix it well for three minutes and turn it off. Let the stuffing cool for five minutes.

Take a mixing bowl and add besan, 1/2 tsp turmeric powder, 1/2 tsp chilli powder, a pitch of hing, 1/2 tsp baking soda and salt to taste. Then add required amount of water.

Make small size aloo mixture, and dip in besan batter and coat well. Then go for deep fry in hot oil.

Take it out once it turned slight golden. Slit the pav and prepare vada in centre. Ready to serve.
