You can also switch the lamb with stewing beef if preferred.
You can find ghomeh sabzi herbs in most middle eastern shop, you can either get it as dried herbs or frozen. You can get it in a tin but to me it doesnt taste as good.
If you buy dried sabzi herbs soak in water for approx 20mins before use and the drain the water.

Fry onions and garlic in 2tbsp vegetable oil

Add the lamb and stir until brown

Add boiling water until it covers the mixture.

Cover and let simmer.

Fry the herbs with 2 - 4 tbsp of vegetable oil until they go nearly black.

Add the herbs to the meat.

Stab the dried limes with a fork and add the limes

If you want to add tomato puree and chopped tomatoes add them to the mixture

Allow to simmer for 60 mins

Add beans and simmer for another 30mins

Serve with rice
