  • Meat
  • 4 1/2 poundspork steak
  • Marinade
  • 2guajillo chiles
  • 2pasilla chiles
  • 1/4onion
  • 2garlic cloves
  • 6whole black peppercorns
  • 4cloves
  • 1 teaspooncumin
  • 1/2 cupvinegar
  • Juice of 2 oranges
  • 1.8 ouncesachiote
  • Salt to taste
  • Toppings
  • Pineapple to taste
  • Cilantro to taste
  • Onion to taste
  • Caramelized onion to taste
  • Hot sauce to taste

Steps

    Blend all the marinade ingredients.

  2. 2

    Add them to the meat and marinate for two hours, or if preferred, leave it marinating overnight.

    After marinating, cook the meat in the marinade in a deep pot over medium heat for half an hour.

    Let it cool to avoid burns, or use tongs, a fork, and knives to cut the meat into pieces.

    Cook the meat with vegetable oil or your preferred oil.

  6. 6

    Assemble the tacos with the toppings.
