An amazingly delish innovative idea from my closet of recipes for a quick fix dinner idea. You can use any of the non-veg preparations that are actually the leftovers and sometimes it does happen that you need to just fix up something so very quickly that it's quite a task. And this idea of mine is just an excellent option in that direction. I have used Mutton mince of yesterday's lunch for today's dinner. Nothing much fancy being done. Hasselback Potatoes are one of the easiest options available and I have just used them to the fullest in this recipe. An amazingly done homestyle hasselback potatoes that are a hit with my family eversince I brought this interesting twist to it. Absolutely delectable and melt in mouth, perfect snack idea for weekends or family reunions. This is not only delish but is also gorgeous in looks. Olive oil and the mild spices makes it so yum that you will ask for a second helping very soon. Try this for your families and stay safe and healthy always.

Ingredients

50 minutes
4-5 servings
  • 7-8Potatoes
  • 1 tbspRed Chilli flakes
  • 1 tspItalian Seasoning
  • 2-3 tbspOlive Oil
  • 1 tspSalt or to taste
  • 1 tbspLemon juice
  • 1 cupMozzarella Cheese
  • 2 cupsMutton Mince (leftover or cooked)

Steps

50 minutes
  1. 1

    Wash and clean the potatoes at first. Do not peel and scrub them well to remove all the dirt. Preheat oven on 240°.

  2. 2

    Line a baking tray with the parchment paper. Lay the potatoes on it's flat side down on two spoons or chopsticks and cut thin slices leaving one fourth inch at the bottom unsliced. The spoon handles or the chopsticks will prevent you from cutting them all the way.

  3. 3

    Mix Olive oil, Red Chilli flakes, Salt and Italian seasoning. Arrange them on the baking tray. Add this oil mix on the potatoes coating them well. Bake on for nearly 40-45 minutes or a little more. Now add in the Cheese quickly and pop it again in the oven just until it melts.

    Just before serving, place generous amount of hot mince on these Baked Hasselback Potatoes and Enjoy!
