Cheese & Onion Oat 'Muffins'

Cheese and onion is a classic flavour combination, loved by many. I've been making these regularly for my son since he was weaning at six months old, (simply don't add any salt if making these for a baby).
I often made him oat bars but sweet versions instead, and one day thought I'd give a savoury version a go and these turned out lovely. These can be enjoyed by adults too of course! Great as a lunch box filler. 😊 You can't even tell they have oats in them, they are light, fluffy and rather morish!
They are called muffins simply because they are baked in a muffin tin. This recipe makes 6 portions in a standard size muffin tin.

Preheat the oven to 180 (fan). Grease the muffin tin with spray oil or butter and set aside. Add the cooking oil to a small pan and fry off the spring onions until softened. Set aside for later.

In a bowl add in the oats, baking powder, cumin, salt and pepper. Stir together.

Next crack in the egg, pour in the milk, add the grated carrot, cooked spring onions and one half of the grated cheddar. Stir together well until a nice loose batter is created.

Spoon the mixture into the greased muffin tin. Sprinkle over the remaining cheddar. Bake in the oven for around 20 minutes until cooked through and the cheese melted and golden on top.

Allow to cool for a couple of minutes then gently turn out the 'muffins' by running a dinner knife around each of them carefully and popping them out from the tin. Once cooled eat and enjoy as a delicious snack. :)
