Cut the bitter gourd into thinly sliced pieces and remove the center seed part. Add half tsp salt in 2.5 cup of water and soak the bitter gourd in it for 15 minutes and later drain the bitter gourd from the water.

Add curd, chilli powder, turmeric powder, ginger garlic paste, rice flour, besan flour, and cornflour and mix it once add the bitter gourd and mix it well by adding little bit water

Add curry leaves in it and let it rest for minimum 30 minutes.

Heat oil in a Kadai, add the bitter gourd in it and fry it once it turns brown in colour.strain the excess oil and serve it hot with curd rice, sambar rice or rasam rice.you can eat it as evening snacks as well.
